Non-Dairy Foodie Fridays: Lentil Soup

I made this yesterday in the Crock Pot and it was divine! The recipe that follows makes a ton (which allows me to freeze the extra) but you can easily cut it in half.)

Lentil Soup

1# dried lentils, sorted and washed
8 cups Vegetable Broth
1 can “italian style” diced tomatoes OR 3 tomatoes, diced
2 medium carrots, chopped
1 medium onion, chopped
1 green pepper, chopped
2 celery stalks, chopped
2 cloves garlic, pressed
1 Tbs curry powder
1 Tbs coriander
salt and pepper to taste

Put all ingredients into a 4Q (or larger) Crock Pot (it will be tight in the 4Q.) Set your crock to low. Cook 8-10 hours until lentils are tender. (6-8 hours on High.) If you want to add addtional spice/ flavor, top with some hot sauce… I like to top mine with Frank’s Red Hot.

If you want a thicker consistency, you can blend some of the lentils and veg in the crock using an immersion blender once the cooking is done.
